These healthy peanut butter cookies are one of my favourite snacks. They are super easy to make (no bake for the win) and are so yummy. They use only 4 ingredients which I normally have on hand, so these cookies get made quite a bit when we want a healthy snack but don’t have much time in our busy day. My 4 year old loves them as well. The only problem is once I make them, I usually eat them all in a day or two. My son always asks me the next day where they all went and says, ‘mommy, you ate them all again, didn’t you’? Of course, he’s right 🙂

These cookies are also really filling and rich. The coconut flour adds the richness and is a great source of fiber, iron and protein. The cookies are naturally sweetened with the maple syrup and peanut butter. A little goes a long way to curb your craving and you will feel full and satisfied after just 1!

What you will need for these healthy peanut butter cookies:

  • 1 cup coconut flour
  • 1 cup peanut butter, I use the organic all natural one
  • 1/2 cup maple syrup
  • 2-3 cubes of the dark chocolate baking squares

Directions:

Mix together the peanut butter and maple syrup. Add in the coconut flour and mix until it forms a cookie dough ball. Break into small balls and flatten down with a fork onto a baking sheet lined with parchment paper. Place the sheet in the fridge for 5 minutes to set. Meanwhile, melt the dark chocolate squares in the microwave in 30 second increments, stirring each time until melted. Drizzle onto the cookies and then place back in the fridge for 30 minutes. Enjoy!
