Maple Roasted Beet Salad

I eat a lot of salads and I like to change it up and have a variety of different options on hand based on what my taste buds prefer on a certain day. This recipe uses a sweet maple dressing combined with beets, spinach, goat cheese and walnuts which make for an amazing combination. This maple roasted beet salad is heavier than some of your typical salads and can easily be a meal. This salad also pairs well with a protein such as chicken.

What you will need for this maple roasted beet salad:

For the salad –

  • 5-6 medium sized beets – scrubbed, trimmed and cut in halves
  • ¾ cup chopped walnuts
  • 3 tablespoons maple syrup
  • 1 (10 ounce) package spinach
  • 1/2 slab of goat cheese (or 1 container of feta)
  • ½ red onion, chopped

For the dressing –

  • ½ cup extra virgin olive oil
  • ¼ cup lemon juice
  • ¼ cup balsamic vinaigrette
  • ½ teaspoon Dijon mustard
  • Salt and pepper to taste

Directions:

  • Place beets into a saucepan and fill with enough water to cover. Bring to a boil then cook for 20-30 minutes until tender. Drain, cool then cut into cubes
  • While the beets are cooking, place the walnuts into a skillet over the stove and toast. Add in the maple syrup and coat. Set aside
  • In a small bowl, mix together the dressing ingredients and set aside
  • Combine the chopped beets, spinach and onions and toss in a large bowl. Add in the walnuts and cheese
  • Stir in dressing. If you don’t like the dressing seeping into your salad, keep it separate and add to salad as needed
