This is THE salad that family and friends always request when they come over for lunch or dinner at my place – it’s an all-around favourite! The key to making an amazing kale salad is to massage the kale, and I mean REALLY massage it. I learned this strawberry kale salad recipe at a friend’s bachelorette party and it was an instant hit. The massaging softens up the kale and gets the dressing coated into it which enhances the flavour.
What you will need for this strawberry kale salad:
For the salad –
- 1 bunch of kale
- 2 apples, chopped
- 10 strawberries, sliced
- Handful of cranberries
- Handful of pumpkin seeds
For the dressing –
- ½ cup extra virgin olive oil
- ¼ cup balsamic vinaigrette
- Slightly less than ¼ cup maple syrup. Use less (or omit) if sweet dressings aren’t your thing. The salad will already be sweet with the apples, strawberries and cranberries
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Directions:
- Wash the kale leaves – massage extremely well under running water, this will soften the kale and get rid of the dirt at the same time. Massaging properly is KEY to any great kale salad
- Add salad ingredients to a large bowl, mix well
- Mix dressing ingredients together. I add everything directly to the salad. The longer the dressing soaks into the salad, the sweeter it becomes. If this isn’t your thing, you can mix the dressing together and store separately adding to the salad as needed. Again, massage that dressing into your kale salad when you do add it in!
